Could you tell me if the M-ACCU1 accusump is suitable for a v8 track car or would the larger be better suited ?
A larger accusump would offer you more protection, I would expect to see a 6 pint accusump on a V8, but you may get away with a 4 pint, it really depends on the size of the problem.
A bigger accusump will deliver more oil over a longer time and a V8 will need a decent amount of oil.
